Vegetarian Recipes for Baby & Yourself

"Whats on the menu bay bay?"

-BREAKFAST-


Plain Baby Mush
(For the Mush that wants a "Mix-in", or for the baby that just likes it plain...)


100% Oatmeal
Boiling Water

Cook Oatmeal for 5 minutes. Puree.
Add whatever fruit mix-in you choose.~



Yum Yum Baby Mush

 100% Oatmeal
Boiling Water
Raisins
Cinnamon
Apple Juice or White Grape Juice

*You will need a baby food processer for this recipe. A blender will work, but will leave a slight mess :)

Prepare oatmeal as directed.
Add raisins after the oatmeal has boiled for 2 min.
Boil the remaining 3 min. (If you are using the 1 min quick oats, add the raisins right away)
Add the cinnamon (a loving amount...:)
Blend
For a burst of flavor and to help cool the mush, add juice and stir.

*I also add a teaspoon greek yogurt and any type of ripe fruit for spring time.
Strawberries, or any type of berry works really well when ripe for natural sweetener instead of juice.
 

Saucy Apples


4 Sweet Apples
  2 Pears (If not, sub 2 more apples.)
Cinnamon (A loving amount)
1/8 Tsp Pure Vanilla Extract
1 cup 100% Apple, Pear, or White Grape Juice

Add everything together into a pan. Bring to a simmer. Puree when apples are soft.

(This is a wonderful "mix-in" for the oatmeal above.)


Raspberry and Pomegranate Puree

2 c Raspberries
2 Tbls 100% Pom Juice
1 med banana
3/4 c Plain Yogurt
1/8 Tsp. Pure Vanilla Extract

Puree Raspberries, and strain them. Add berries to everything else and puree.
(For older babies and toddler, make this into a puree and drizzle over fruit chunks)

Breakfast Delight

3 Mini Pancakes with Cinnamon
1 Scrambled Egg
1/2 C Cottage Cheese
1 Avocado
Fresh Squeezed Orange Juice

Pancakes:
4 Tbs Whole Wheat Flour
3/4 Tsp Soy Flour
3/4 Tsp White Sugar
1/4 Tsp Baking Powder
1/8 Tsp. Salt
1/8 Tsp Cinnamon
1/8 Tsp Vanilla
2 Tbsp H20
2 Tbs Soymilk/Rice Milk

Make pancakes, scamble egg in a little butter, and mix the avocado with the cottage cheese.
Watch your little one go crazy with their fingers!
Baby will adore you.

For babies 9 mos and older

LUNCH&DINNER -

Tofu Lunch


4 oz. Firm Tofu'
1/4 c Fresh Steamed Butternut Squash
1 Banana
3 Tbs of Wheat Germ


Puree all ingredients. Substitute any fruit or veggie

Lentil Soup

2 tbs Lentils
1 half of a Red Bell Pepper
1 Carrot
2 Shallots
2 tbs Cheddar Cheese
1 tsp Butter

Saute the chopped pepper, shallot, and carrots in butter or olive oil.
Add water and lentils.
Bring to boil and let simmer for 20-25 min.

Puree in baby mixer or leave as is for older babies.

For babies 6 mos and older

Potato Soup

2 Potatoes
2 Carrots
2 tbs Leek
2 c Veggie broth
2 tbs Cheddar Cheese
Loving pinch of Fresh Parsley
Loving pinch of Fresh Chives
Soy Milk/Rice Milk/Breast Milk/ Formula

In a seperate pan, saute the leek in butter. Boil potatoes and carrots in the veggie broth. Let the veggies soak up a lot of the broth. Blend leek, potato/carrot mixture, fresh herbs, cheese and soy milk.
Great for freezing!

For babies 6 mos and older
